Escarole 'Natache'
Best performing escarole This vegetable isn’t used much by Australians but in France and Italy it is very popular sautéed in garlic and olive oil. Bitter vegetables are of course very good for our health. Cooking does soften the bitterness and brings out sweet flavours in escarole. Sow seed from August until late February.
When to sow: August until early April
Where to sow: In a seed tray or direct in a prepared garden bed
Depth to sow: 5mm
Aspect: Full sun or as sunny a spot as possible.
Soil: Prepared, well drained, fertilised soil. Add lime if soil is too acid.
Spacing: Between plants 30cm
Between rows 30cm
Directions: Raising plants in seed trays and planting out when 5cm tall brings good results in growing full size endives. They can also be sown straight into their permanent position in a prepared garden bed.
