Corn Salad Recipe

Yet another harvest of Corn Salad this morning; perhaps our most delicious winter green.

World's Simplest Recipe:

 

Toss in 1 part Balsamic vinegar, 4 parts Olive Oil and add a pinch of salt and one of sugar and it is divine and so nourishing!

Anyone who has ever eaten corn salad, or mache as it is known in Europe, knows just how wonderful a winter salad green it is. A cool season vegetable I pick enough for a salad several times a week from the end of May until spring. It has a soft nutty flavour not in any way bitter.  Plant mid autumn until mid-winter.

When to sow:    Mid autumn - mid winter
Where to sow:   Direct
Depth to sow:    5mm
Aspect: Full sun or as sunny a spot as possible.
Soil: Prepared, well drained, fertilised soil. Add lime if soil is too acid.
Spacing: Sow seed 3 cm apart Between rows 10 to 25cm apart

 

Directions: Plant in a drill straight into the vegetable garden in late spring or summer.
